Simple No Bake Pumpkin Seed Granola

Carving pumpkins this weekend? Don’t waste the seeds! They’re a brilliant little extra to mix up your breakfast granola with a little autumnal twist.

Once you’ve dug all the seeds out of the pumpkin, remove the flesh, wash them and leave them to go dry on a plate – this may take a couple of days.

This recipe is super simple and will take you literally 5 minutes.

You will need:

  • Live Yogurt
  • Rolled Oats
  • Pumpkin Seeds
  • Dried Fruit
  • Mixed Nuts
  • Honey
  1. In a bowl, layer the bottom with live yogurt, a product renowned for its probiotics and good bacteria for your gut. Even a spoonful a day can be beneficial.

2. On top, sprinkle a small handful of rolled oats, followed by a handful of pumpkin seeds. Pumpkin seeds are apparently ‘nutritional powerhouses’ full of nutrients such as magnesium and zinc.

3. I used a mixed bag of dried fruit and nuts, including crunchy walnuts. These add flavour and extra crunch to your granola.

4. Finish by topping the bowl with runny honey, grab a spoon, and enjoy!
