Salted caramel shortbread is my go-to festive bake – perfect with a cup of tea, a hot chocolate, or an irish cream.
My super simple recipe takes less than an hour in total, and will make your house smell incredible in the meantime.
After being unable to locate our usual salted caramel flavouring, I improvised with some of my M&S Salted Caramel Brownie Cream Liqueur to add the flavour – and it’s a real winner. These crunchy biscuits are great for dunking, and look lovely on a serving tray for when guests come to visit.
To make the shortbread, you will need:
- 160g plain flour
- 60g caster sugar
- 115g softened unsalted butter
- 30ml M&S Salted Caramel Brownie Cream Liqueur
Method:
Add the flour, butter and sugar to a bowl and work into a breadcrumb consistency. Add in the a little over a single measure of M&S Salted Caramel Brownie Cream Liqueur and press the mixture into a ball of dough.
Roll out the dough on a floured surface to around 0.5cm thick and cut our your stars. Place them on a sheet of parchment paper on a baking tray, sprinkle them with demerara sugar (optional) and place them in the fridge for 20 minutes.
Preheat the oven to gas mark 5, the put the shortbread in for around 20 minutes until golden.
Put some ice in a glass and pour out a glug of the liqueur, and sit down with a festive film and enjoy!
